Taiwan is an island more than two-thirds covered by mountains. Tea-growing areas are located at elevations between 1,000 and 2,500 meters. High-mountain conditions provide abundant mist and low temperatures that are ideal for growing oolong tea, while the water used for irrigation comes from pure mountain springs.The name “oolong” refers to the method used to process the leaves after they are picked, but there are actually many varieties of tea plants, each producing oolong tea with a unique flavor and texture. This high-mountain tea is now one of the most highly prized teas on the market. Because of limited sun exposure and differences in temperature and cloud cover, high-mountain tea has a distinctive aroma and is known for its pronounced medicinal properties. Compared with teas grown at lower elevations, this tea offers exceptionally floral notes and has a distinctive, long-lasting milky aroma.
