Phoenix Dan Cong is a premium oolong tea that originated in the Phoenix Mountainous Region in Chaozhou, Guangdong Province, located along the coast of the South China Sea. This famous oolong variety stands out for its rich aroma and layered taste that goes beyond the tea liquid itself. The aroma and taste are complex, imbued with floral and fruity notes, and at the same time balanced, soft and smooth. It belongs to moderately roasted oolong teas, and its aroma is strongly present both in the dried leaves and during cooking. Upon contact with boiling water, the scent is suddenly released and spreads, creating a unique experience that delights tea lovers around the world.

When preparing this tea, special attention should be paid to speed – if you use gaiwan, it is important to immediately pour the liquid into the carafe and not let it sit for too long. This method of preparation allows you to preserve the refinement and aromatic profile of the tea. To prepare this tea, it is recommended to use mountain spring or purified water and a teapot with a lid.

Dan Cong Oolong is grown on the slopes of the Phoenix Mountains near the city of Fenghuang. Some plantations grow wild, along with other crops, which contributes to exceptional biodiversity. Thanks to the natural balance, pests are controlled without the need for pesticides. The Phoenix mountain range stretches at altitudes of 400 to 1400 m, and the mild climate with an average temperature of 22 °C is ideal for growing this exceptional organic tea.

Chaozhou Phoenix Mountain is known for its premium Phoenix Dan Cong oolong tea, which draws its unique aroma and flavor from the local climate and soil. Nestled among the 73 Phoenix Mountains, this region has fresh air, a mild climate, and plenty of rainfall. In addition to being a tourist attraction, the mountain is also a major tea-producing area, with over 20,000 hectares of tea gardens.

Among them, an ancient forest with more than 3000 trees dating back 200–400 years stands out, including the legendary “Song Zhong Tea King” trees up to 600 years old.

In 1982, Dan Cong was listed among the 32 most famous Chinese teas. Since then, Phoenix Dan Cong has won numerous awards in China and gained the status of one of the most respected oolong teas. Many call it the “king of teas” for a reason, and its reputation as a true treasure has been confirmed among connoisseurs and enthusiasts around the world.

Preparation – kettle

  • 5 g tea
  • 110 ml of water

  • 5-6 g of tea
  • 120 ml water
  • Temp. 95°C
  • Overflow 5: 5s, 10s, 15s, 25s, 40s

Cold brew

  • Quantity: 8 g of tea per 1000 ml of water
  • Preparation: Put the tea leaves in water at room temperature, let them sit for 15 minutes and then put them in the refrigerator for 8 hours. Strain the drink and drink within 24-48 hours.

Serving tip: If desired, you can additionally decorate the finished tea with fresh mint leaves, slices of lemon, orange or other fruit of your choice.
