Shou Mei Tea is a white tea that is made from the naturally dried top leaves and tops of tea. It has a strong flavor that is reminiscent of lighter oolong teas. It is mostly grown in the provinces of Fujian and Guangxi in China. Since Shou Mei tea leaves are harvested later than Bai Mudan leaves, the tea can be darker in color.

The taste of fresh Shou Mei tea is pleasant and mild.

The turning point in the aroma of this tea occurs after three years of aging. The fresh green taste and aroma of white tea transform into a more complex, heavier and floral scent. These transformations of aged white tea are summed up in a popular Chinese saying: “One-year tea, three-year medicine, seven-year treasure”.

The medicinal value and tea content of tea leaves will gradually increase with longer storage time. In China, many elderly people brew white tea for consumption when they feel unwell or when they catch a cold.

Shou Mei is affordable and convenient to drink at home, in the office, or on a trip.

• 4 g tea
• 110 ml water
• temp. 85°C
• Overflow 7: 40sec, 25 sec, 20 sec, 20 sec, 25 sec, 30 sec 30 sec

Cold brew

• Quantity: 7 g of tea per 1000 ml of water
• Preparation: Place the tea leaves in water at room temperature, let them sit for 15 minutes, and then refrigerate for 8 hours. Strain the drink and drink within 24-48 hours.

Serving tip: If desired, you can additionally decorate the finished tea with fresh mint leaves, slices of lemon, orange or other fruit of your choice.
